Our products
Pasticceria Riva’s products are carefully and responsibly crafted, free from hydrogenated fats or surrogate chocolate. The production includes a wide range of delicious chocolate specialities, sponge cake slices filled with assorted delicate creams, a selection of traditional tea pastries, pre-baked shortbread products (tartlet and tart shells) in different sizes, puff pastry shells (cannoncini), besides other bakery and pastry products.
In addition, the choice of carrying on artisan tradition has allowed Pasticceria Riva to develop products in line with vegan ethics, free from animal-derived ingredients.
Pasticceria Riva definitely renovates Italian tradition by complying with vegan guidelines and using wholesome ingredients to craft products which are “Vegan OK” certified.

Analysis and Security
In order to constantly control our products and procedures, an accredited laboratory periodically samples raw materials and finished goods for microbiological and chemical testing.
We keep the entire production under constant supervision and strictly follow the standards dictated by the food and confectionery industry procedures.
Food sector operators prepare, implement and maintain one or more permanent procedures based on the principles of the HACCP system. Riva Confectionery has adopted a handbook, which adheres to Community legislation for hygiene in food production.
Starting from the identification and evaluation of the products, this system guarantees control and safety for consumers. A planned sequence of observations and measurements of control parameters evaluates any management and activity with reference to the total quality of food processing and products.
Specific procedures manage the environmental conditions of the production sites and Riva adheres strictly to the standards, applying them precisely at each level: raw materials, machinery and staff.

This handbook describes the methodology used to define the self-control system for the management of company activities. It defines the working methods and controls to be carried out to ensure that all activities in the process of preparing and distributing products are such that risks are controlled.
